Roasted Chicken Thighs in Red Pepper Sauce

Ingredients:

    Chicken Thighs
  • ~Boneless, skinless, chicken thighs
  • (1.5 pounds)
  • ~Salt
  • (According to your taste)
  • ~Pepper 
  • (According to your taste)
  • ~Coconut oil
  • (1 tablespoon) 
  • ~Cheese 
  • (4 ounces )
  • ~Fresh Parsley
  • (2 tablespoons chopped)
  • Roasted Red Pepper Sauce
  • ~Roasted red pepper
  • (4 ounces)
  • ~Garlic cloves
  • (2)
  • ~Olive oil
  • (2 tablespoons)
  • ~Heavy cream 
  • (½ cup)

Method:
➤ Season the thighs with salt and pepper.
➤ Add the coconut oil to the preheated skillet.
➤ Now place the chicken thighs into the skillet.
➤ Sear for five minutes on each side, or until chicken is browned.
➤ In a blender add roasted red pepper, garlic cloves, and olive oil. Blend them and make the puree.
➤ Now add the heavy cream to the puree and blend it again so that it gets mixed well.
➤ Now remove the skillet from the heat.
➤ Pour the puree on the chicken thighs in the skillet.
➤ Make sure to cover each side of the chicken thighs with puree.
➤ Now add cheese at the top of the sauced chicken.
➤ Now bake it in a preheated oven for 10-15 minutes at 350⁰F.
➤ After baking garnish it with fresh chopped parsley.
