Keto Egg Stew

Ingredients:

➤6 large egg 2 medium fresh tomatoes 1/2 medium onion 2 teaspoons fresh garlic 1/2 cup olive oil 1 medium red bell pepper 1 medium jalapeno pepper 1 teaspoon curry powder 1/2 teaspoon fresh thyme 1 whole chicken bouillon cube Salt to taste

Method:

The components should all be prepared and measured. Deseed the tomatoes, slice the red bell pepper. Cut the onion and jalapeno pepper in half.

The deseeded tomatoes, red bell pepper slices, onion, and jalapeno pepper should all be placed in a blender. Blend them for few seconds.

Slice the second half of the onion and mince the garlic.

In a frying, add olive oil and saute the garlic and sliced onion for about 1 minute on low medium heat.

Whip the eggs in a bowl.

Pour the blended mixture into the frying pan.

Stir continuously for five minutes.

Add the curry powder, thyme, chicken bouillon cube, and jalapeno. Combine everything and let it cook for a further two to four minutes.

Pour the eggs in. let it cook uncovered for 2-3 minutes.

After that, combine everything and mix for about a minute. Add more thyme and a sprinkle of salt as a garnish. Enjoy!
