Keto-friendly beef stew may be made with a few straightforward substitutions. Still smooth and quite soothing. We compensate for the lack of thickener by making sure that the stew is thoroughly reduced to produce something hearty and satisfying. Any cold night can become pleasant and tolerable thanks to it.
A traditional supper favourite in countless homes all around the world is beef stew. Additionally, this stew dish is the ideal way to use up any leftover vegetables. Just chop them up and add them if you have any leftover roasted potatoes, glazed carrots, or fried mushrooms! !
Ingredients:
Beef chuck roast (cut into 1" pieces) 2lbs
Pink Salt According to your taste.
Freshly ground black pepper
Extra-virgin olive oil 2tbsp
Baby bella mushrooms 8 oz (slice)
Small onion. 1 (chopped)
Medium carrot 1(peeled and cut into rounds)
Stalks celery 2 (slice)
Garlic cloves 3 (mince)
Tomato paste. 1 tbsp
low-sodium beef broth. 6 cups
Fresh thyme leave. 1 tsp
Freshly chopped rosemary 1 tsp
Method:
➤Salt and pepper the steak generously after patting it dry with paper towels.
➤Heat oil in a big pot over a medium heat. Working in batches, add the beef and fry it for about 3 minutes per side, until it is browned on all sides. Repeat with the remaining meat, using extra oil as needed, after removing it from the pot.
➤Add the mushrooms to the same saucepan and cook for 5 minutes, or until brown and crispy. 5 minutes later, add the onion, carrots, and celery and simmer until tender. One minute later, add the garlic and heat it until fragrant. In order to coat the vegetables, add tomato paste and stir.
➤Salt and pepper the beef, then add the stock, thyme, and rosemary to the pot. Once boiling, lower the heat to a simmer. At least 1 hour should be spent simmering to achieve tender beef.
