Bombay Chicken/Mutton Biryani

In South East Asia, Bombay Biryani is a household favorite. Despite the fact that there are several varieties of biryani around the continent, Bombay Biryani is among the most well-liked choices. This is a fan favorite that is made with rice, chicken, and ground spices and cooked to perfection! frequently eaten alone or with raita and kachumber salad.

Ingredients:

~Meat (mutton or chicken)  1 kg

~Basmati rice 1 kg

~Potatoes 4 (large)

~Lemon 4

~Cloves 4

~Onion 4 large (sliced)

~Green chilies 6-7

~Green cardamom 6-7

~Black pepper corn 6-7

~Black cardamom 5-6

~Tomatoes 6-7 (chopped) 

~Dried plum 1 cup

~Hot milk 1 cup

~Oil 1 cup

~Yogurt 1 cup 

~Mint leaves 1 bunch

~Black cumin seeds 1 tsp

~Chili powder 1 tbsp

~Yellow food color ¼ tsp

~Coriander powder 2 tbsp

~Ginger garlic paste 2 tbsp

~Salt (According to your taste)

Method:

➤1 kg mutton/chicken should be washed and marinated with 1 cup yogurt and 2 tablespoons ginger garlic paste, 1 tbsp chili powder, and 2 tbsp coriander powder.

Marinate for 30 minutes, add 2 lemons, 1 bunch of mint leaves, 6 green chilies, 1 cup plum, and salt to taste

In a pan, heat 1 cup of oil and cook 4 sliced onions till golden brown.

Half of the fried onion should be spread on a piece of paper. Now add the marinated meat to the pan.

➤Cook for 5 minutes, then add water according to the meat (3-4 glasses if using mutton, 1 glass if using chicken)

Cover the pan, and let it cook until the water evaporates and the meat is tender for about 40-45 minutes.

Boil the potatoes under steam, then cut them into four pieces and fry them in oil.  

Also, cut each tomato into four pieces

Fry tomato slices and add them to the chicken mixture along with the cooked potatoes.

Now boil 1 kg basmati rice with mint leaves, 6-7 green chilies, 6-7 black peppercorns, 4 cloves, salt to taste, and enough water to cover until it is half done.

Drain the water and set it aside.

Grease a second pan and cover it with boiled rice

Top with the chicken mixture, then with the remaining boiled rice.

Garnish with the remaining fried onion.

Dissolve ¹/4 teaspoon of yellow food color in warm milk.

Pour over boiled rice. Pour in the juice of 2 lemons, cover, and cook over medium to low heat for 10-15 minutes.
